To help chef Christian Geideman launch his Japanese izakaya concept, we collaborated on the restaurant layout and provided permit drawings for this Michelin-rated eatery. The long narrow space begins with a simple bar to highlight the extensive shochu and sake offerings, followed by dining booths and raised tatami eating nooks framed by the historic building’s concrete columns and walls. Much of the interior was finished out by Ippuku partner Paul Discoe, a master wood worker, using live-edge lumber from fallen timber in the local hills.
